Knishes aren't in my baking repertory even though I enjoy eating them and am happy to say that I've visited Yonah Schimmel's Knishery in New York City. Laura Silver, author of Knish: In Search of The Jewish Soul Food, was mentioned in a really interesting article in The New York Times and popped up on YouTube and Weekend Edition this morning. She'll even be making a speaking appearance here in town, I've learned.
Just thinking about knishes—potatoes cradled in dough—got me thinking about pierogies, too. Sigh. So much appetite and ambition; so little time.
